Meet Beth
Hi I’m Beth, founder of Beth Edwards Nutrition, a clinic that focuses on no-nonsense approaches to eating well and living well. I’m a registered nutritional therapist and big advocate of sensible eating. My approach combines the latest evidence-based advice with person-centred care – you’re in safe hands. If we work together, we won’t just talk about nutrition and biochemistry. We’ll also explore your feelings towards food and your relationship with it. Completing two degrees in psychology before qualifying as a registered nutritional therapist means that I prioritise the person behind the type 1 – and work with you as a human, not just a bundle of cells.
Food has always been a huge part of my life. You only have to look at my family nicknames (sausage, chip, pudding) to get the picture.
Fascinated by blending flavours, textures and smells, I found creativity and solace in the kitchen. This led to some rather experimental inventions (chorizo Thai red curry is one I’d rather forget).
But my diagnosis of type 1 diabetes muddied the water. Type 1 is a condition like no other. It requires meticulous focus on what you eat. My relationship to food became all about counting, measuring intake, and dialling up insulin doses. Food and blood glucose levels are inextricably bound, so food swiftly became ‘good or bad’.
Suddenly it was fewer chorizo curries and more stress, angst, and confusion.
And let’s be honest. Food is a little bit complicated, right? One day we’re told it’s OK to eat something, the next day we’re told it’s not. There is a lot of noise out there and it’s getting noisier. I’m here to cut through that. I provide evidence-based nutrition support that works – no fads, no judgement, no-nonsense.
